In the example set out in the video, it's true that the resulting geometry could have been created using a solid, revolved cut.



However, if the surface were more complex, then using the patch functionality would be of benefit.



See example:

In the example I sketched 3 datum curves (one on each of the 3 planes) and then created a boundary surface.



Using that surface, I created a patch feature and there you are.



Upon reflection, it should be noted that the geometry could have been created by using a surface cut. However, if the surface contours extended beyond the boundaries of the solid

then the patch would create the intended geometry where the cut using the surface/quilt would not.
