Is it possible to remove/alter data in the file header

I did some contract work for a company, including building family tables, on the condition that I should keep the rights on the family tables. Unfortunately, in every file there is info relating to the company I was working for, since I was using one of their workstations. Is it possible to remove or alter this data in the file header ?
 
This is (part of ?) the data in the header that I meant :

I have done it to the above header to remove my name when sending a file out. I have also edit the file itself. Its time consuming you just have to play with it
