Hidden Line Mesh Settings

Can anyone share the settings to display hidden line meshing. I saw a tutorial on the E_Cognition website where the instructor clicked once on a quilt to display the surfaces, then clicked again on the same quilt to display a hidden mesh ( see photo below ). I looked on the forums for info on this setting to no avail. Any suggestions will be appreciated.

you just said it. Click once on the surface. Move you mouse slightly....then click the surface again. This is the quarry selection functionality with Surfaces.

If you do the same with surfaces shaded the surface turns pink instead of meshed.
