A patch will add and remove material at the same time. Imagine a surface shaped like an "S" that intersects a flat surface of a solid. From the side the two objects look like a dollar sign - $. If you imagine the solid material is to the left of the veritcal line, the Patch will add the lump of material on the right side and remove the lump on the left side. Using a surface cut will only remove material on the left side. You would have to make a second feature (Protrusion/use quilt) to add the lump of material on the right.
