Pros and Cons for machining NURBS surface

depends on who made your NURBS surface. is the NURBS geometry one automatically generated 'looks like a spider web' patch of surfaces or did the designer use proper surface modeling technique.

Post a screen shot if your unclear. The only real problem you have is not being able to modify the geometry once you get a CNC to sit on (so to speak as if your scan were a seat) if the point cloud were automatically surfaced. The later techniques of using point cloud data to model the form with current surface modeling techniques is the way to go.

What is your point cloud for. If your developing a holster for a cell phone thats one thing. If your trying to recreate a clay model for a motorcycle seat that is an entirely different approach that I have outlined on this and other forums before...

(work this in somehow) I even teach a two day class for that very thing. Basically what to do with point cloud geometry that will be CNC'ed, modified and CNC'ed again... iterative changes being released for production.
This class is after resytle or geomagic data is received.
