Just create a parameter date in your part or assy as string, then put it in a table as &date if you really want to create a parameter for date.
I for one don't create a parameter for date, because my part may be used in many drawings and I want to put the date on which I made the drawing. So I have a blank field in my format that I fill when I make the drawing.
