Proper way to specify coplanarity

I've got a fiberglass water tank that we are going to be fixing side panels too. The resulting thin panels should look relatively flat so we are having mounting pads glassed in along the sides and I want them to be coplanar within a to be determined tolerance. Is the proper geometric tolerance to be specified "surface profile"? I'm fairly certain that this will convey the message clear enough.

See ASME Y14.5-2009 8.4.1.1, & fig. 8-15. It shows how to use profile of a surface to control coplanarity. I'd post a pic but I think it would violate the ASME copyright.
