If that component is assembled without ANY controlling dimensions there is NOTHING to edit so "Edit" is not shown.
Depending upon how the first component was assembled into your default datums could be the cause of the no "Edit Definition" or it could be because it is the first component.
To work around this assemble a component with no placement constraints then drag it above the first component in the tree. "Edit Definition" will now be available to do as you choose.
