Any recommendation on which ones are good?

I'm trying to understand the process to design parts here.

First, you start out with a sketch. Next, you turn these sketeches 3d?

The design process for most parts is this:start with a 2-D sketch, then extrude or rotate or sweep, etc. You can create protrusions (solids) or cuts in this manner.

SolidWorks offers free tutorials with your installation. They are locally installed:
LaunchSolidWorks thenclick the "SolidWorks Resourses" tab (right side, with a little house icon). Under "Getting Started" click "Online Tutorials." You will be presented with a window with various lessons- start with lesson 1.

You will learn a lot by using the online tutorial. I suggest going through all the ones you think are applicable (i.e., do you think you'll be doing "Molded Plastic Design?"). Should only take a day or two. Maybe a week if you do every single one of them.
